È la seconda volta in 3 anni che provo a fare dei croissant classici a casa con burro e zucchero nell’impasto (la scorsa volta erano senza) e questo risultato mi ha aiutato a capire alcune differenze, la sfida adesso sarà ottenere questa struttura senza ❤️ ❤️Lascia un like, salva e condividi il reel🙏 Sgogliatrice manuale Kneader_Japan rs201 Ricetta 8 croissant: -500 g farina Manitoba -150ml acqua -150ml latte -50g zucchero -50g burro -1 uovo -25g lievito di birra -10g sale -5g malto (opzionale ma consigliato) Sfogliatura: -250g burro Procedimento: impasta in macchina tutti gli ingredienti (tranne il burro) fino a che si staccano dalla ciotola. Dai un giro di pieghe e metti in frigo per 2 ore e poi in freezer fino al giorno dopo. Schiaccia l’impasto, stendilo il doppio della dimensione del burro e dai una piega a 3 (spessore 1 cm). Dai un’altra piega a 4 (spessore 1 cm), stendi allo spessore di 5mm. Tra una piega e l’altra sempre meglio far riposare in freezer l impasto impellicolato per 15-20min Ricava dei triangoli da 10cm x 30cm, allungali per il lato lungo e arrotolali. Lascia lievitare fino a raddoppio coperti e cuoci in forno a 180gradi per 20min o fino a doratura. Prepara il pranzo con me (ASMR) 🥗 un’insalata fresca, semplice e nutriente che non mi stancherò mai di mangiare 💖 Ingredienti (per 4 persone): ✨ 4 piccole zucchine ✨ 6-8 pomodorini ✨ 1 panetto di feta vegetale ✨ 4 piccoli avocado (o 1-2 grandi) ✨ 600g di ceci già cotti ✨ 1 spicchio d’aglio ✨ q.b. olio evo ✨ q.b. sale ✨ q.b. pepe ✨ Scorza e succo di 1 limone ✨ 1 manciata di semi di zucca ✨ 1 manciata di semi di girasole ✨ q.b. basilico Tagliate le zucchine a fettine e saltatele in padella con un po’ di olio, uno spicchio d’aglio e un po’ di sale per circa 10 minuti. Nel mentre tagliate i pomodorini e conditeli con sale e olio, mescolando bene per amalgamare gli ingredienti. Tagliate anche la feta vegetale a cubetti e tenetela da parte. Infine ricavate la polpa dagli avocado e conditela con sale, olio, pepe, scorza e succo di limone. Assemblate ora la vostra insalata partendo dai ceci già cotti e proseguendo con i pomodorini, la feta vegetale, le zucchine e l’avocado. Terminate con dei semi di zucca e di girasole, una macinata di pepe e del basilico tritato grossolanamente.
