Cinnamon rolls recipe 4 1/2 cups all purpose flour 1 cup of warm milk 1/2 cup sugar 1 tablespoon of yeast 1 teaspoon salt 2 eggs 1/3 cup melted butter 1/2 heavy whipping cream 1 cup brown sugar 1/2 room butter room temperature 2 tablespoon cinnamon 1/2 cup warm heavy whipping cream In a large bowl put the warm milk and yeast let it sit for 10 minutes. The mix in sugar, salt, eggs and butter salt. Finally add the flour mix for a minute and let it sit for 5 minutes. Then let it mix for 7-8 minutes until the dough is smooth and soft, but If the dough is to sticky add more de flour 1/4 cup each time until it feels like play dough. When the dough feels right use the oil on your hand knead in few more time and allow the dough to rest in a warm area covered with a warm towel for an 1 hour. In a bowl brown sugar, butter, Cinnamon mix until it’s combined. Set this aside. Once your dough has rised put a little bit of flour on the counter top and place the dough down and spread the dough into a large rectangle then spread the cinnamon all over your dough. Roll up the door and then use either a string or a knife and cut them into 1 1/2-2 inches thick. Place the dough in a warm place and allow it to rise for another 30 minutes. Pour 1/2 cup of warm heavy whipping cream right on top of the cinnamon rolls. Then preheat the oven to 375°, place the cinnamon rolls in the oven for 23-25 minutes or until golden brown. Homemade KanufaA/Kataifi Dough Recipe 1/2 cup flour 1/4 cup corn starch Pinch of salt 1 cup water Piping bag or Ziploc bag In a bowl, sift the flower in the cornstarch at the salt mix it around, then add in the water mix it until there’s no clump using a strainer or sifter strain out all of the batter into another cup or a bowl. Fill up a piping bag halfway and cut a small tiny tip at the bottom. Heat your pan on a low heat. When you’re ready start in a circle and go all the way out. Be careful you don’t want clumps of the batter or it’ll be too thick. Leave it on for about 10 seconds no longer and remove. It should literally glide off of the pan. Repeat this until you have no more bad or left. You can toast it in the almond at 350° for about 15 to 20 minutes until it’s golden brown or you can put some butter into a pan and you have your very own Kunafa dough. Mix with a spoon first then when the dough becomes thick mix by hand or mixer for 5-8 minutes. Then use the oil on your hand knead in few more time and allow the dough to rest in a warm area covered with a warm towel for 1 hour. Once it raises Cut the doll into ball shape.. cover them with a damp warm cloth, for 15 minutes to rise. Use a griller pan or your regular pan on the stove top medium heat add a little bit of oil on top and go ahead and flatten out the dough by stretching it or rolling it out with a rolling pin, Once you flatten it go ahead and place it on top of the hot pan and let it sit for 1 to 2 minutes or until golden brown on one side. Take it out and allow it to cool then in a bowl put in the pistachio and the toasted Café mix cut up the strawberries and melt the chocolate then start assembling. Add some chocolate around the rim of the cup then put in the cup a handful of strawberries, spoon in some of the Kunafa mixture, some of the melted chocolate, then put another handful of strawberries, another spoon of the Kunafa mixture and the rest of the strawberries, some of the Kunafa mixture, drizzled the melted chocolate and the white chocolate on top. I usually do the liquids first, then at the rest of the ingredients, but you can mix them all together if you want to hurry up and get it over with. Mix it for a 2 until everything is combined. Eight or 9 inch cake pan and you can separate them into 2, spray with nonstick spray and pour the cake batter inside. Then put it in the oven for about 30 to 35 minutes until the inside is completely done. Remove from the oven and allow it to cool down before flipping. Put it in the fridge to completely cool down then split it right through the center or if you’re using Cheesecake pants, don’t worry about the splitting the cake. Make the frosting. Maqluba 2 whole chicken cut up 1 tablespoon paprika 1/2 teaspoon curry 1/2 turmeric 1 tablespoons of badia to complete 1 teaspoon of salt 1 teaspoons fresh cracked pepper 1 teaspoons seasoning salt 1 tablespoon garlic powder 1/3 cup Olive oil Mix all these ingredients into a tray and bake 350° for an hour and 15 minutes until the chicken is done. 2-3 large egg plants sliced 3-4 cup basmati, rice washed and soaked 5-10 minutes 1 whole cauliflower 4-5 potatoes peeled and sliced 3-4 Chicken bouillon cube with 3-4 cups water or 3-4 cups of chicken broth Peel and sliced the potatoes and the eggplant. Clean the cauliflower and I like to leave them like florettes rats fried these altogether for about 3 to 4 minutes, the potatoes for about five minutes. A small pot out in the bouillon cubes with some salt and water and have it come to a boil. Then make sure you have a little bit of olive oil around the bottom of the pot before layering the eggplant, potatoes, 1/2 of the rice, chicken, rice, the rest of the potatoes, and cauliflower. make sure it’s like an even layer and then pour the chicken broth right on top, at least have an inch of water on top of the rice. Start on high heat in once it starts to boil cover the top lower the heat to a low temperature and let it sit on the fire for at least 30 minutes or until the rice is done removed from the heat. Then add the water. Set this aside in a warm place to raise. For 1 hour. Make your simple syrup recipe it’s at the bottom of the post. In a large deep frying pan heat the oil up to medium low heat, you don’t want the oil to be too hot because won’t be crunchy. Make sure you have a piping bag or teaspoons exactly how I did it in my video to get a perfect round ball. Sometimes you have to make a few at a time to get used to it and then you can start to make more as soon as they come out of the fryer put them right into the simple syrup. You wanted to sit for a good 2 to 3 minutes and keep mixing them around. You want them to be completely drenched in the simple syrup take them out and eat them immediately. Simple syrup 2 white sugar 1 1/4 cups water Squeeze of fresh lemon juice, about 1 teaspoon In a medium saucepan, combine together the sugar, water and squeeze of lemon juice. Set on the stovetop over high heat. Try to avoid stirring it as it heats to prevent crystallization from happening, but if the sugar is not dissolving, then help it out with a few stirs. Slowly add sugar and 1 teaspoon vanilla and continue to beat until stiff peaks. Add mascarpone cheese and mix just until combined. Set aside. in a bowl add 1 teaspoon sugar, 1 teaspoon vanilla, and expresso, mix well. Then dip the lady fingers in the coffee (Don't soak them--just quickly dip them on both sides to get them wet) and lay them in a single layer on the bottom of an 8x8'' or similar size pan. Smooth half of the mascarpone mixture over the top. Add another layer of dipped lady fingers. Smooth remaining mascarpone cream over the top. Dust cocoa powder generously over the top (I use a fine mesh strainer to do this). No Baked Dubai Cheesecake 1/2 pack of Kunafa dough 1/4 cup ghee or butter 1 cup pistachios butter or paste 1/2 cup melted milk chocolate 2 8 oz cream cheese softened to room temperature 1/2-1 cup powdered sugar 2 cup heavy cream 1 teaspoon vanilla 1/4 cup heavy whipping cream 3/4 cup melted milk chocolate On a medium heat in a pan add in the butter or ghee melted then at the Kunafa dough. Mix it until it turns golden brown remove from the stove, allow it to cool down. Put the toast Kunafa dough adding the pistachio butter, add about 1/4 cup melted chocolate. Use an 9 inch springform pan spraying with nonstick spray then put the Kunafa dough pressing down hard and put it in the freezer for about 10 to 15 minutes. Whip up heavy cream, until stiffed peaks. In another bowl, add powdered sugar, cream cheese, and vanilla, mix this until it’s smooth, then folding heavy whipping cream. Once these are all incorporated at a spoon of the pistachio butter and squirrel it into the cream cheese batter. Take the springform pan out of the freezer put the cream cheese into the springform pan and put it in the fridge for at least 4 hours. Melt the rest of the chocolate warm up 1/4 cup heavy whipping cream combined it with the chocolate mix until it’s translucent. Remove the cheesecake from the springform pan. Pour the ganache on top spread it out evenly. Melting some pistachio butter and pouring it on top then sprinkle some of the pistachios on top. Once you’ve incorporated these add 2 tablespoons of ghee into the tray and spread it out. That pour in the mixture right into the tray cut up in any shape you like putting the nuts on top. Dubai Cake Pops 3 eggs 1 cup water 1/2 cup oil 1 box chocolate cake mix 2 cups chocolate for melting 24-30 sticks or straws 1 cup Kunafa dough 1/2-1 cups pistachio paste Preheat the oven to 350° In a bowl add the eggs, water, oil and cake mix. Mix it for a few minutes until there’s no clumps in the cake. I prefer using an 8 inch round baking pan spray with nonstick spray and pour the cake mix right into. Put it in the oven for about 25-35 minutes. Don’t overbake it. Well, that’s in the oven. Bake the Kunafa dough for 20 to 25 minutes until it’s golden brown at 350°. Take it out and let it cool out. Mix the pistachio piece with the dough and roll those into small balls. Place these in the freezer for 30 minutes. When the cake comes out of the oven, put it into a stand mixer while still hot. Start mixing it because of the heat from the hot cake. You’ll notice it’ll start to clump that’s perfect. Take them out either using your hand or scooper start scooping out the Kunafa balls into the cake pops cover them with the cake pop and roll them into a nice perfect size ball and put them into the freezer for a few hours. Once they’ve harden up, take them out of the freezer and starting to stick on one end. Melt the chocolate and 30 second increments until they’re completely melted usually mix the chocolate every time the 30 seconds are up. It should take a total of 1 1/2 minutes to melt the white chocolate.
