#ad #ad Making the most delicious mini lemon meringue tarts with @KerrygoldUSA Find the full recipe below and be sure to get Kerrygold butter for your next dish 🍋 Graham Cracker Crust - 1 and 1/2 cups graham cracker crumbs (about 12 full sheet graham crackers) - 1/4 cup granulated sugar - 6 Tablespoons Kerrygold unsalted butter, melted Lemon Curd - 5 large egg yolks - 1 and 1/3 cups water - 1 cup granulated sugar - 1/3 cup cornstarch - 1/4 teaspoon salt - 1/2 cup fresh lemon juice - 1 Tablespoon lemon zest - 2 Tablespoons Kerrygold unsalted butter Meringue - 5 large egg whites, at room temperature - 1/2 teaspoon cream of tartar - 1/2 cup granulated sugar - 1/8 teaspoon salt -mix graham cracker crumbs with sugar and melted Kerrygold butter -press graham cracker mixture into ramekins or tart pans. Bake at 350 for about 10 minutes until golden brown -combine water, sugar, cornstarch, salt, lemon juice and lemon zest in a sauce pan and whisk on medium heat until mixture begins to thicken, about 5-7 minutes. While that is thickening separate your egg yolks from your egg whites. Set egg whites aside for the meringue. -whisk the egg yolks and then slowly add in a spoonful of the warm stovetop mixture into the egg yolks, mixing quickly to not cook the eggs. Repeat this a few times and then reduce the stovetop heat and whisk in the egg yolk mixture. -continue to mix the curd on the stovetop until the mixture is thick and bubbles at the surface. -add lemon curd to pre baked crusts and let cool in the fridge for at least 1 hour. -make the meringue by mixing egg whites, cream of tartar and salt with a handheld mixer. Whisk until soft peaks form and then add in sugar and continue to mix until stiff peaks form. -add meringue to cooled lemon tarts and use a spoon to create peaks. Toast with a torch or enjoy as is! Best enjoyed within one day! Store in the fridge until you are ready to enjoy! #lemon #lemonmeringue #lemondessert

Mi marido… mucho decirme que soy una almond mom, pero bien que se come mi bocadillo en el tren! 🚂 El finde pasado nos fuimos a Valencia para el comienzo de las fallas y como sabía que en el tren nos iba a entrar el gusanillo de querer comer algo… preparé estos bocadillos de queso fundido en pan de hogaza de masa madre y tostados en la sartén con un poco de mantequilla casera de ajo asado… una delicia! 🧀🧄🧈 Os dejo la receta por si os animáis a replicarla 😉 Receta de mozzarella de leche de vaca y cabra 🐄🐐 ✨1 litro de leche de vaca fresca ✨1 litro de leche de cabra fresca ✨1,6 g de ácido cítrico en polvo disuelto en 60 ml de agua no clorada ✨1,25 ml de cuajo líquido (unas 25 gotas) disuelto en 30 ml de agua no clorada ✨1,25 ml de cloruro de calcio líquido disuelto en 30 ml de agua no clorada ✨Sal al gusto (para el agua de reposo y conservación) 1️⃣ Añade ácido cítrico a la leche y remueve suavemente 2️⃣ Calienta la leche a 32°C, añade la disolución de cloruro de calcio y remueve suavemente
3️⃣ Agrega el cuajo y deja reposar tapado 10-15 min hasta que cuaje.
4️⃣ Corta la cuajada en cubos pequeños y calienta a 42°C removiendo suavemente para que se separe más suero.
5️⃣ Escurre el suero y mete la bola de queso en agua caliente 79-75°C durante 30 segundos y estira la cuajada hasta que quede elástica.
6️⃣ Forma bolas y sumérgelas en agua fría con sal Receta de pan de masa madre 🥖 
✨ 500g de harina de fuerza
✨ 350g de agua
✨ 100g de masa madre activa
✨ 10g de sal 1️⃣ Mezcla harina y agua, deja reposar 30-45min (autólisis).
2️⃣ Añade la masa madre y mezcla bien. Incorpora la sal.
3️⃣ Fermentación 4-6 h a temperatura ambiente y durante las 2 primeras horas realiza 3 sesiones de pliegues cada 30-40min.
4️⃣ Fermentación en bloque: cubre y deja en nevera toda la noche 12-18h
5️⃣ Al día siguiente, saca la masa de la nevera y deja atemperar 30-60 min. 6️⃣ Da forma sin desgasificar mucho y deja en un bol con un paño enharinado a temperatura ambiente 1-2h.
7️⃣ Precalienta a 250C con el dutch oven dentro. 8️⃣ Greña y hornea a 250°C con vapor los primeros 20 min (o con la tapa puesta si tienes un dutch oven) y luego sin vapor a 230°C otros 20-25 min (o sin tapa) #almondmom #masamadre #mozzarella #queso #recetas #recetasfaciles #cocinafacil #pan #sourdough #sourdoughbread #grilledcheese #DIY

Raclette, bacon and egg breakfast 🌭 Ingredients for 1 bun: 1 hotdog roll 2 eggs 1 tbsp vegetable oil 2 tsp avocado mayo (see previous reel for recipe) 2 slices Raclette cheese 2 slices streaky bacon 3 tomato slices 2 lettuce leaves Salt and pepper to taste 1.    Heat 1 tsp oil in a non-stick frying pan. Fry the streaky bacon on medium to high heat for 2 minutes on each side until browned. Set aside. 2. In a bowl whisk the eggs together with salt. Pour the egg mixture onto the hot pan and fry for 30 seconds. 3. Place the hotdog rolls flat side down and cook for 30 seconds before flipping over. Fold the omelette onto the roll and place the raclette cheese onto one side of the roll. Cover and cook on low heat for 3 minutes until melted. 4. Spread the avocado mayo on the other side followed by bacon slices, tomatoes and lettuce 5. Fold the other half and serve hot.
